I changed wallets in my production Flight Sheet. What happens to the funds that are pending payout on the old wallet? Are the funds being transferred to the next deposit to the new wallet?

No. Funds (unpaid balance) will keep on wallets where you mined before.

I started mining then I changed the address in “Owner’s Wallets”.
Everything is gone.
I end up with 0.072ETH unpaid.
